These heritage Birds are a rare breed, which Larry
and Madonna Sorell,
owners of Lazy S Farms, raise for The
Good Shepherd Ranch. They are marketed by Frank Reese, owner of
Good Shepherd Ranch, and through Heritage
Foods USA.
The meat from the heritage turkeys is a succulent meat, covered with a layer of fat under the skin. The broth from roasting
is a dark clear broth and makes a wonderful stock, which is sought
after by gourmet chefs.
The turkeys are given no antibiotics and are fed no
animal by-products. The bronze turkey is the most commonly grown and
recognized by the American Standards of Perfection. Lazy S turkeys
take seven months to mature. They are a roosting bird and love to
roam. They are protected from preditors by a 7-foot fence. Each year
Lazy S Farms raise from 1500 to 2000 Bronze turkeys. The Bronze turkey
is an American icon and has fed America for 200 years.
